Spinach Salad

Baby Spinach – enough to cover your plate

4 or 5 small tomaotes

Asparagus – 1 bag frozen

Chicken – precooked

pine nuts or any other nut you like

mandarine oranges – one small can or snack pack drained

shreeded cheese

I use frozen, asparagus, thawed slightly in the mirowave the whole bag for maybe a min, then chop into bite size pieces.  Heat a skillet with just enough olive oil to cover the pan and put in chopped asparagus.  On medium heat just cook until slightly brown.  I usually start my asparagus before I start preparing my plate and it is usually just right. Fill plate with spinach, chicken (desired amount), mandarine oranges, nuts, tomatoes, cheese.

DRESSING

1- T sugar

1/2 t dry mustard

1/2 t dried clantro

3 T olive oil

3 T vinegar (any salad vinegar I use balsamic

1/2 t Tony’s or your favorite mixed seasoning

stir all ingredients well and drizzle over salad
